Ingredients:
– 8 oz cream cheese, softened
– 1/4 cup sugar
– 1 tsp vanilla extract
– 1 cup blackberries
– 8 (8-inch) flour tortillas
– 1/4 cup butter, melted
– 1/4 cup sugar
– 1 tsp cinnamon
– Zest of a lemon 🍋
Directions:
1. In a mixing bowl, combine softened cream cheese, sugar, and vanilla extract until smooth. Gently fold in the blackberries.
2. Place a spoonful of the cheesecake mixture onto each tortilla. Roll them up, tucking in the sides, to form chimichangas.
3. Brush the chimichangas with melted butter and bake in a preheated oven at 375°F for 15 minutes or until golden and crispy.
4. In a small bowl, mix sugar, cinnamon, and lemon zest. Sprinkle the mixture over the hot chimichangas.
5. Serve warm and enjoy the gooey blackberry cheesecake goodness! 🤤
