Ingredients:
– 2 cups blackberries
– 1/4 cup granulated sugar
– 1 tsp cornstarch
– 1 cup all-purpose flour
– 1 cup old-fashioned rolled oats
– 1/2 cup brown sugar
– 1/2 tsp baking powder
– 1/4 tsp salt
– 1/2 cup unsalted butter, melted
– 1 tsp vanilla extract
– Zest of 1 lemon 🍋
Directions:
1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
2. In a bowl, mix blackberries, granulated sugar, and cornstarch. Set aside.
3. In another bowl, combine flour, oats, brown sugar, baking powder, salt, melted butter, vanilla extract, and lemon zest. Mix until crumbly.
4. Press half of the oat mixture into the bottom of the prepared pan.
5. Spread the blackberry mixture over the oat layer.
