– 2 tbsp cold water

Directions:
1. In a saucepan, combine the heavy cream, sugar, and vanilla bean seeds. Heat gently until the sugar dissolves, and it’s about to boil. Remove from heat.
2. In a small bowl, sprinkle gelatin over cold water. Let it bloom for a few minutes.
3. Whisk the bloomed gelatin into the warm cream mixture until smooth.
4. Strain the mixture through a fine sieve to remove the vanilla bean remnants. Pour into ramekins or molds.
5. Chill in the refrigerator for at least 3 hours, or until set.
