Ingredients:
– 1 1/2 cups chocolate cookies, crushed
– 1/2 cup butter, melted
– 2 cups heavy cream
– 1/4 cup powdered sugar
– 1 tbsp instant espresso powder
– 1 tsp vanilla extract
– 2 cups semi-sweet chocolate chips
– 3 eggs, separated

Directions:
1. In a bowl, mix the crushed chocolate cookies with melted butter. Press the mixture into the base of a springform pan to form the cake’s crust. Chill in the refrigerator.
2. In a saucepan, heat 1 cup of heavy cream with powdered sugar and espresso powder until almost boiling. Remove from heat and stir in the vanilla extract and chocolate chips until smooth.
3. Beat the egg whites until stiff peaks form. In another bowl, whip the remaining heavy cream until soft peaks form.
