– 8 oz bittersweet chocolate, melted and cooled
– 1 tsp vanilla extract

1. In a heatproof bowl, whisk together the egg yolks and sugar until pale and thick.
2. In a saucepan, bring the water to a simmer. Slowly pour the hot water into the egg mixture, whisking constantly.
3. Place the bowl over a pot of simmering water, continue whisking until the mixture reaches 160°F (71°C) or until it’s thick and ribbony.
4. Remove from heat, let cool slightly, then beat the mixture until it’s cool to the touch.
5. Add the softened butter gradually, beating until smooth and creamy.
6. Slowly drizzle in the melted chocolate, vanilla extract, and salt, beating until well combined. 🍫
