Ingredients:
– 2 cups heavy cream
– 1 cup whole milk
– 1 cup shredded gruyere cheese
– 1 cup shredded parmesan cheese
– 6 egg yolks
– 1/2 cup granulated sugar
– 1 tsp vanilla extract

Directions:
1. Preheat the oven to 325°F (165°C).
2. In a saucepan, heat the heavy cream and milk over medium heat until steaming (do not boil).
3. In a bowl, whisk together the egg yolks and sugar until well combined. Slowly pour the warm cream mixture into the egg mixture, whisking continuously.
4. Stir in the gruyere and parmesan cheese until melted and smooth.
5. Add the vanilla extract and salt, mix well.
6. Strain the mixture and pour into ramekins. Place the ramekins in a baking dish filled with hot water.
7. Bake in the preheated oven for 40-45 minutes, or until the center is set but still slightly jiggly.
8. Let the Crème Brûlée cool, then refrigerate for at least 2 hours.
9. Sprinkle a thin, even layer of sugar over the custard. Caramelize the sugar using a kitchen torch until golden and crispy.
